HEALTHY YAM PASTE

Ingredient:
Yam [sliced] - 800gm
Water chestnut, removed skin & diced - 5
Pumpkin [sliced] - 100 gm
Sugar - 200gm
Pandan leaves - 1stalk
Method:
1.   Mix sugar and yam, steam for 30 minutes
2.   Blend yam till smooth
3.   Return yam paste to tray: add water chestnut, stir well.
4.   Add pandan leaves and pumpkin on yam paste, steam for 20 minutes.
5.   Put the yam paste in a bowl and serve hot

GOLDEN PUMPKIN WITH SALTED EGG

Pumpkin [cut into thick strips] - 300gm
Salted egg yolks - 3
Garlic, finely chopped - 1
Chilli padi, chopped - 1
Curry leaves - 1 small sprig
Unsalted butter - 2tbsp
Evaporated milk - 4tbsp
Seasoning:
Sugar - 1tbsp
Pepper - 1/2tsp
Method:
1.   Deep-fry, bake or steam pumpkin, drain well and set aside.
2.   Mash salted egg yolks and set aside.
3.   Melt butter in wok, add curry leaves, garlic and chilli padi. Stir-fry until aromatic.
4.   Lower heat to medium and add salted egg yolks. Keep stirring until it "bubbles"
5.   Add evaporated milk, followed by seasoning.
6.   Place the pumpkin on plate, pour the sauce over, serve hot

SILKEN BEAN CURD WITH SPICY MINCED CHICKEN

Silken bean curd [cut into 6s] - 3 pack
Dried chilli - 5gm
Minced chicken - 150gm
Chilli padi
Szechuan peppercorn - 1/2tsp
Ginger [thinly shredded] - small tumb size
Garlic [chopped] - 5gm
Chinese mushroom [diced] - 10gm
Spring onion [diced] - 2tsp
Corn flour/ potato flour - for thickening
Seasoning:
Oyster sauce - 2tsp
Segar - 1tsp
Maggie seasoning - 1/2tsp
Ligh soya sauce - 1tsp
Water/stock - 100ml
Method:
1.  Steam or deep fry bean curd, set aside.
2.  Heat cooking oil in wok, add dried chilli, chilli padi, peppercorn, 
ginger and garlic stir fry till fragrant.
3.  Add minced chicken & mushroom
 stir-fry slowly over medium heat till chicken is cooked.
4.  Add seasoning & water, simmer for 2minutes 
and ticken the sauce with corn flour
5.  Add the bean curd and simmer for another minutes
6.  Garnish with spring onion
7.  Serve hot.

CLAYPOT CHICKEN

ingredient:
Chicken cubes 400gm
Marinade for chicken:
Salt
Cornflour 1tsp
Pepper 1/2tsp
Onion, cut into cubes 1
Chilli padi, dice 1
Dried chilli 10gm
Spring onion, cut into 3cm1stalk
Ginger 10gm
Garlic 5 slices
Oil 1tbsp
Sauce:
Red vinegar 3tbsp
Black vinegar 3tbsp
Sugar 1 1/2tbsp
Dark soya sauce 1tbsp
Light soya sauce 1tbsp
Oyster sauce  1tbsp
Maggi seasoning 1/2tbsp
Salt 1/2tbsp
Water 100ml
Method:
Marinade chicken for 30mins with marinade.
Heat oil on claypot, saute garlic, onion, ginger, dried chilli & chilli padi.
Add chicken & sauce, cook for 5mins or until chicken is cooked.
Add spring onion and serve hot.

WATER CHESTNUT WITH EGG WHITE AKA MATI YU MI LU

This chinese dessert
Ingredient:
Waterchestnut, coarsely chopped 400gm
Egg white 1
Water 600gm
Sugar 125gm
Pandan leaves 1 stalk
Motor car flour/ potato flour 1tbsp
Method:
Add pandan leaves to water & bring to boil, simmer for 10 mins
Add sugar and water chestnut. Boil soup until sugar is dissolved
thicken the soup with corn flour
Add egg white to the soup and gently stir
Serve hot or cold as desired
i ask my friend to translate it name in mandarin
so aka Mati Yu Mi Lu

pencuci mulut orang tionghua......
meh lihat bahan nya:
Sengkuang china [ bentuk nya kecil] potong dadu kecil 400gm
telor puteh sebiji
air 600gm
gula 125gm
daun pandan 1 ikat
tepung motor car/ tepung kentang 1tbsp
Cara membuatnya:
jerang air campur daun pandan, didihkan selama 10 minit
campur gula dan sengkuang, didih hingga gula larut
pekatkan sop dengan mengunakan tepong jagung
campurkan putih telur sambil di kacau perlahan
hidangkan sejuk atau panas, ikut selera anda..... hehehe
mummy suruh teman mummy translate ke nama asal nya
so jadi lah Mati Yu Mi Lu
selamat mencuba..........

RED BEAN BUN AKA ROTI KACANG MERAH

This week mummy attended classes to make bread
see ..... soo soft, soo tembam just like mummy ..... hehehe
let see ingredients:
Bread flour 350gm
Castor Sugar 66gm
Yeast 10gm
Super Text 1tsp bread improver
Condense Milk 1tbsp
Egg 1
Cold Water 150gm
Salt 1/4tsp
Butter 40gm
Filling:
Red Bean Paste 20gm [20gm x 10]
Egg Wash:
Egg 1
method:
Add all the Ingredients into the mixing bowl except the butter and salt.
Mix well
Add butter & salt, mix into a soft dough
Rest the dough for 10 minutes & divide into 30gm each
Shape it into rounds and rest for 10 minutes
Flatten the dough and wrap the filling [red bean paste] with the dough,
Shape the dough into rounds
Proof the dough to 2 1/2 times its size and brush egg on it
Bake at 200C for 20 minutes

minggu ini saya hadiri klas membuat roti
lihat..... tembam tembam sama saperti mummy..... hehehe
yok lihat bahan:  
Tepung roti 350gm
Castor Sugar 66gm
Yeast 10gm
Bread Improver Super Text 1tsp
Susu pekat 1tbsp
telur 1
Air sejuk 150gm
garam 1/4tsp
Butter 40gm
Inti nya:
Kacang merah Paste 20gm [20gm x 10]
sebiji telur untuk disapu atas roti:
bijan hitam dan putih jika suka
Cara membuat:
campurkan kesemua bahan kedalam mesen pengisar, kecuali butter dan garam. bancur rata
campurkan butter & garam kedalam doh kacau lagi
rehat kan doh selama 10 minutes & bahagi kepada 30gm setiap satu
bentuk doh bulat bulat dan rehat kan selama 10 minit
ratakan doh isi kacang merah paste dan bentuk bulat
di tekap dengan tuala lembab dan golekan diatas bijan
leperkan potong ikot suka sapu telor
rehatkan doh sahingga ia naik 2 1/2 kali saiz nya
Bakar suhu 200C selama 20 minit
Wallah Ban Kacang Merah siap
soo lembut.... soooo yummy sebiji macam di kedai roti rasa
dan lembut nya...... halal betol lah mummy attd. this class... hehehe
lihat mummy pon kepo nak bergambar dengan roti ku..... hehehe
cuba lah.... but mesti gunakan mesin yang industrial ya....!!!
jika tidak berpeloh lah kita uli tu doh hingga ia saperti doh piza or prata
lihat yang sedikit bijan tu... my bun yang pertama... my Staff nurse say me stingy ... hehehe
mummy, boss & staff nurse Goh PL hadiri class, so kecoh lah kita ... pot pet pot pet... :)D
yang lebat bijan diatas tu ban ke dua ku... Staff nurse kata i greedy lak..... hehehe 
macam macam lah staff nurse ni.....^-^ macam mak nenek lah dia ni ada aje...
sooo happening.... kecoh dapur CGH....!!!! hehehe
